Walnut Cranberry Relish

Ingredients

  • 1/2 cup walnuts
  • 1 pkg. (1 lb.) fresh cranberries
  • 2 medium oranges
  • 1 1/2 cups granulated sugar

Directions

  1. Drop walnuts into rapidly boiling water; boil 3 minutes. Drain well and spread on flat baking pan. Bake at 350 degrees F. for about 10 minutes until crisp and very lightly browned.
  2. Cool and chop. Rinse cranberries and oranges. Cut oranges into small wedges; remove any seeds. Grind, using fine blade (or process in food processor until finely ground).
  3. Grind cranberries, using coarse blade (or process, turning on and off until coarsely chopped).
  4. Combine cranberries, oranges and sugar, mixing well. Chill until serving time. Stir in walnuts just before serving.
  5. makes about 1 quart
