Spring Chutney

Ingredients

  • 3 tart apples
  • 2 cups of fresh or frozen rhubarb
  • 1 cup raisins
  • 1 finely chopped medium onion
  • 1 cup cider vinegar
  • 1 cup apple juice
  • 1/2 cup brown sugar
  • 1 tsp. ground ginger
  • 1 tsp. mustard seed
  • 1 tsp. salt
  • 1 bay leaf

Directions

  1. Peel, core and dice apples. Combine with rhubarb.
  2. In a non-aluminum pan, add, apple and rhubarb, raisins, chopped onion, cider vinegar, and apple juice. Bring to a simmer.
  3. Add brown sugar, ginger, mustard seed, salt and bay leaf. Cook uncovered for 30 minutes, stirring often, until mixture is thick.
  4. Remove bay leaf. Serve with roast lamb, duck or chicken.
  5. makes 3 cups
