Spiced Figs

Ingredients

  • 3 quarts figs (do not peel)
  • 1/2 cup baking soda
  • 2 quarts boiling water
  • 6 cups granulated sugar
  • 1 cup vinegar
  • 2 Tbsp. whole cloves
  • 1 stick cinnamon

Directions

  1. Place figs in a large pan. Sprinkle soda over figs and add boiling water. Let stand 5 minutes.
  2. In a large cooking pot, combine water, sugar and vinegar. Tie cloves and cinnamon in cheesecloth and add to pot.
  3. Drain figs and boil in syrup 10 minutes; cool and refrigerate overnight. Repeat process every morning for 3 mornings.
  4. Pack in pint jars. Seal. Process in a boiling water bath for 10 minutes.
