Chocolate Coconut Milk Ice Cream

Ingredients

  • 1 (14 oz.) can full-fat coconut milk or coconut cream
  • 1/4 cup PLUS 2 Tbsp. unsweetened cocoa powder
  • 1/4 cup honey, maple syrup or agave nectar
  • 1 tsp. vanilla extract

Directions

  1. In a blender or food processor, combine all ingredients until smooth and creamy. Transfer to a freezer-safe container and freeze until firm, about 4 to 6 hours. If the ice cream becomes too solid, let stand 15 to 20 minutes before serving. Or freeze mixture in an ice cream maker, following manufacturer’s instructions.
  2. Variation: For a chocolate peanut-butter flavor, add 1/4 cup smooth peanut butter.
