Southwestern Chili

Ingredients

  • 1 Tbsp. canola oil
  • 1 lb. chicken tenders, cut into 1-inch pieces
  • 1 medium onion, chopped
  • 1 medium red or green bell pepper, chopped
  • 4 tsp. chile powder
  • 2 tsp. cumin
  • 1 tsp. garlic powder
  • 1/2 cup dry red wine or lower-sodium beef broth
  • 1 (14 1/2 oz.) can diced tomatoes with juice
  • 1 (15 oz.) can Great Northern beans, with liquid
  • 1 cup frozen corn
  • Coarse salt to taste

Directions

  1. In a large saucepan, heat oil on medium-high. Cook chicken, onion and bell pepper 7 to 8 minutes or until liquid evaporates. Add chile powder, cumin and garlic powder. Cook, stirring constantly, 30 seconds or until aromatic. Stir in wine or broth, tomatoes and juice, black beans, Great Northern beans, corn and salt to taste. Bring mixture to a boil. Reduce heat and simmer 20 minutes.
