Pineapple Refrigerator Dessert

Ingredients

  • 1 1/2 cups graham cracker crumbs, about 16 crackers
  • 2 Tbsp. granulated sugar
  • 1/4 cup butter, melted
  • 1/2 cup butter, softened
  • 1 cup confectioners' sugar
  • 1 egg
  • 1 cup chilled whipping cream
  • 1 ( 201/2 oz.) can crushed pineapple, well drained

Directions

  1. Mix together the graham cracker crumbs, sugar and melted butter. Press 1/2 of this mixture in bottom of an 8-inch square pan.
  2. Beat the 1/2 cup softened butte, confectioners’ sugar and egg until mixture is light and fluffy. Spread over graham cracker layer.
  3. In a chilled bowl, beat the chilled whipping cream until stiff. Fold in drained pineapple. Spread over above mixture.
  4. Sprinkle with remaining graham cracker crumbs. Cover and chill 12 hours before cutting into squares and serving.
