Holiday Mint Brownies

Ingredients

  • 1 cup sugar
  • 1/2 cup shortening
  • 2 eggs
  • 1 tsp. vanilla extract
  • 2/3 cup all-purpose flour
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • Topping:
  • 2 Tbsp. melted butter
  • 1/2 tsp. mint flavoring
  • 2 Tbsp. milk
  • 1/2 tsp. salt
  • 1 cup powdered sugar
  • Few drops green food coloring
  • 1 tsp. vegetable oil

Directions

  1. In a large mixing bowl, beat together Sift together flour, cocoa, baking powder and salt; add to creamed mixture and mix well. Spread in a greased 9 × 9-inch pan; bake at 350 degrees for 25 to 30 minutes until set. Allow to cool.
  2. Mix melted butter, milk, mint flavoring, powdered sugar and green food coloring until smooth. Spread over cooled brownies. Now melt the chocolate square, mix with a teaspoon of oil, and drizzle over iced brownies. When topping is set, cut into squares.
