Taco Pie or Salad

You can “build” this in your glass casserole dish…but because some don’t care for all of the ingredients I keep each ingredient separate and let each person build their own.
This is good as is or you can use the “Spicy French Salad Dressing” in this book.
My friend, Sue, never used the Ranch Style Beans…but I tried this once and we loved it.

Ingredients

  • 1 pound ground beef
  • 1 package taco seasoning mix
  • water (see directions)
  • 1/2 head lettuce shredded
  • 1 large tomato diced
  • 1 bag Doritos "Nacho Cheese" flavor
  • 1 can Ranch Style beans drained
  • 1 cup grated cheese
  • -
  • OPTIONAL GARNISH: sour cream, guacamole, sliced avocados salsa, jalapenos, lime wedge

Directions

  1. TIP: If you feel you need more meat…use 1/2 pound more meat and add a little onion and chili powder in addition to the one package of taco seasoning mix.

  2. Brown beef. Drain excess grease.

  3. Add 1 package taco seasoning mix. Pour water into the empty package from the taco seasoning and add to beef.

  4. Add 1 can Ranch Style beans. Simmer until mixture thickens.

  5. In the bottom of medium size rectangular glass casserole dish layer Doritos; press the Doritos down slightly to break up larger chips and level out.

  6. Next layer the meat on top.

  7. Then sprinkle with grated cheese.

  8. Scoop up and put on your plate…add lettuce and tomatoes on top of each serving.

  9. Serve with any or all of the following optional garnishes: sour cream, sliced avocados, guacamole, salsa and jalapenos if desired. You can squeeze a little lime juice over all.
