Easy Chicken Pot Pie

I never wanted to try chicken pot pie…seemed like just too much work. Played around with ingredients and came up with this.

Ingredients

  • 1 box Pillsbury Allready Pie Crusts (there are two pie rounds in a box)
  • 1 pre-cooked rotisserie chicken from the grocery store.
  • 1 small package frozen mixed vegetables
  • 1 small can whole potatoes (or left over baked potatoe)
  • 1 stick margarine
  • 1/3 cup flour
  • 2 cups milk (approximate)

Directions

  1. Debone and cut up rotisserie chicken.

  2. Pre cook frozen mixed vegetables in the microwave for about 4-5 minutes.

  3. Cut up potatoes into small dices.

  4. Mix together chicken, vegetables and potatoes.

  5. In a skillet, melt margarine, stir in flour, pour in milk. Salt & pepper to taste. Simmer until you have a thick gravy.

  6. Pour gravy over the chicken mixture in the bowl.

  7. Line a deep dish pie plate with one round of pastry dough.

  8. Pour in the chicken mixture filling, cover with the other pie crust. Seal edges like you would for a pie.

  9. Make slits in the top of the pie for steam to escape.

  10. Bake in oven for 45 minutes at 400 degrees or until crust is golden brown.

  11. TIP: You can use a can of Cream of Mushroom soup OR Cream or Chicken soup instead of making your own cream sauce to make this even easier.
