Chinese Cole Slaw

(from Coker Family’s recipe box)

Two cooked and cubed chicken breasts can be added for a main dish salad.

Ingredients

  • 1 small head cabbage or Napa cabbage, shredded
  • 1 package chicken Top Ramen noodles
  • 1 small bag slivered almonds
  • 3 tablespoons sesame seeds
  • 1 bunch chopped green onions
  • -
  • DRESSING:
  • 3/4 olive oil
  • 3 tablespoons sugar
  • 3 tablespoons cider or wine vinegar
  • 1 flavor packet from Top Ramen

Directions

  1. Toast almonds and sesame seeds in a skillet with a little butter, or use Pam in a non-stick pan.

  2. Combine cabbage and green onions.

  3. Combine all dressing ingredients in a jar and shake well.

  4. Pour dressing over cabbage and marinade in refrigerator for a couple hours.

  5. When ready to serve, add sesame seeds, almonds and crunched up Ramen noodles to cabbage.

  6. Toss.
