White- Scallop Squash Pudding

Ingredients

  • 1 white scallop squash, cut in chunks
  • 2 Tbsp. butter
  • 1 to 1 1/2 cups milk
  • 1 egg
  • 1 1/4 Tbsp. flour
  • 1/2 to 3/4 cup sugar
  • 1 to 2 Tbsp. brown sugar
  • salt, nutmeg and pure vanilla to taste

Directions

  1. Peel and cut squash into cubes. Cover with water and cook ( as you would mashed potatoes) until tender. Add butter, egg, milk, flour and sugar. Then mash. Stir in a dash of salt, nutmeg and vanilla to taste. Grease a baking dish and add mixture. Bake slowly at 325-350 degrees until set (like baking a custard).
  2. Can be served as a side dish, or top with fresh berries and pecans, and serve as a dessert. Drizzle with honey or dark syrup.
