Batter- Fried Eggplant

Ingredients

  • 2 medium eggplants
  • 1/2 cup flour, all purpose
  • 1 small egg yolk
  • Peanut oil for deep frying
  • Sesame Dipping Sauce:
  • 1 cup mayonnaise
  • 1 1/2 Tbsp. sesame oil
  • 1 Tbsp. whole grain Dijon mustard
  • 1 Tbsp. seasoned rice wine vinegar
  • 1/2 cup chopped green onions

Directions

  1. Cut eggplants into slices, sprinkle with salt and place in a colander. Set aside for 30 minutes. Meanwhile, to make the sesame mayonnaise, combine all the ingredients in a bowl and mix. Set aside.
  2. Rinse eggplant and thoroughly dry with paper towel. Combine flour, egg yolk, and 4 oz. of water in a bowl (do not over-mix, lumps are fine). Season with salt. Heat oil in a deep-frying pan over high heat. Dip eggplant in batter, then add to hot oil in batches. Fry for 1-2 minutes or until lightly golden. Serve with sesame dipping sauce.
