Summer Squash Salad

Ingredients

  • 6 medium yellow squash thinly sliced
  • 1/2 cup green onion thinly sliced
  • 1/2 cup celery sliced
  • 1 cucumber sliced
  • 1/2 cup cauliflower pieces (I omit.)
  • 2 tablespoons red wine vinegar
  • 3/4 cup sugar
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/3 cup salad oil
  • 2/3 cup cider vinegar
  • 1 clove garlic crushed

Directions

  1. Any combination of summer or other fresh raw vegetables will work. My family prefers the yellow squash, green onion, celery, cucumber, red bell pepper and/or green bell pepper…we leave out the cauliflower.

  2. Combine rest of ingredients. Stir well, spoon over vegetables.

  3. Chill about 12 hours, stirring occasionally.

  4. Serve with a slotted spoon.
