Shrimp Scampi

This is how I made it one day and it was delicious. Served it with Rice Pilaf, recipe also in this book.

Ingredients

  • 1 pound medium to large shrimp, peeled & deveined
  • 1 1/2 sticks butter (I used 1 stick salted real butter and 1/2 stick unsalted real butter)
  • 1 clove garlic thinly sliced
  • 2 tablespoons chopped fresh parsley
  • Cajun/ Creole seasoning to taste

Directions

  1. In skillet melt butter over low heat.

  2. Turn off heat and add garlic, parsley and seasoning. Allow this to sit while dealing with shrimp.

  3. Peel and devein shrimp.

  4. Turn heat back on to medium under butter. Place shrimp one layer in melted butter, simmer just until shrimp turns pink and is done, turning as needed.

  5. Serve immediately over Rice Pilaf.
