Garlic Spaghetti

(from Coker Family’s recipe box)

This would go great with any Italian dish as a side. Stuffed Zucchini, Chicken Parmesan, etc.

Ingredients

  • Thin spaghetti pasta
  • 3-4 cloves garlic minced
  • 1/4 to 1/2 cup olive oil
  • 1-2 fresh minced basil leaves (optional)

Directions

  1. Cook desired amount of thin spaghetti in salted water with a little olive oil added to water, maybe 2 tablespoons.

  2. While pasta is cooking… Heat olive oil in a small pan, be careful and don’t over-heat. Stir in minced garlic and optional basil. If your oil is too hot the garlic will burn and become very bitter, but you don’t want the garlic raw either.

  3. Drain cooked pasta.

  4. Pour olive oil and garlic over pasta…serve as a side. If you have some extra spaghetti or marinara sauce you can offer on the side to spoon over pasta.
