Green Rice or Broccoli & Rice

I prefer rinsing broccoli and adding it to the water, bringing water and broccoli to boil, then adding rice and let the broccoli cook along with the rice. If you do this you can just mix remainder of ingredients in and it is ready to serve…you will not have to bake for 40 minutes. You can, if you want, transfer to a glass casserole and microwave for about 5 minutes.

Ingredients

  • 2 cups instant rice
  • 1 small jar Cheese Whiz
  • 1 10 ounce can Cream of Mushroom Soup
  • 1 package frozen chopped broccoli
  • salt & pepper to taste
  • 1/2 cup celery, chopped
  • 1/2 cup onion, chopped
  • 1/2 cup margarine

Directions

  1. Prepare rice according to package directions (1 cup rice to 1 cup water, etc.)

  2. Thaw broccoli by pouring very hot water over it in a colander and draining well. Add to cooked rice. (See note above.)

  3. Add cheese and soup to the cooked rice.

  4. Saute onions & celery in margarine.

  5. Mix all ingredients and bake in a 2 quart casserole dish for 40 minutes at 350 degrees.

  6. TIP: When all the kids were home I would increase broccoli to about 1 1/2 package and use 3 cups of the rice and water. The other ingredients still worked just fine.
