Quick Baked Sweet Potatoes

Love sweet potatoes…so rich in vitamins and fiber. This makes fixing them lots easier…and no, they don’t get yucky like a regular potato does in the microwave.

Ingredients

  • 2-3 medium to large sweet potatoes (1 per person)
  • 1/2 stick margarine
  • water

Directions

  1. NOTE: Most people don’t like microwaved white potatoes…I don’t like them either. The Sweet Potatoes react differently and are great fixed this way.

  2. Wash sweet potatoes and cut off the tips and any places that look questionable.

  3. Rub margarine over each sweet potato.

  4. Place in a 9 or 10 inch glass pie plate.

  5. Add about 1/2 inch water in the bottom.

  6. Cover tightly with saran wrap, be sure to poke a small hole or two in the saran.

  7. Place in the microwave for 10 minutes on high. Check potato to see if it is soft by squeezing. If it is not soft microwave for another 5- 10 minutes at Half Power (Power Level 5). Continue doing this until potato is done. Remember, it will continue cooking from its own heat.

  8. Serve with additional butter and a little bowl of brown sugar. I like mine with just butter…hubby likes to add brown sugar.
