Candied Sweet Potatoes

Ingredients

  • 5-7 large yams/sweet potatoes, peeled, cut into 1 1/2 inch thick circles
  • 1/3 cup orange juice
  • 1 stick margarine
  • 1/2 cup light brown sugar, packed
  • allspice
  • cinnamon
  • ginger

Directions

  1. TIP: I make mine in a large electric skillet…you can do in a pan on the stove top also.

  2. Peel and cut up sweet potatoes/yams. Place into skillet or pan.

  3. Pour orange juice over all.

  4. Sprinkle with the light brown sugar, you can add more or less depending upon your personal preference.

  5. Sprinkle very lightly with allspice, cinnamon & dried ground ginger.

  6. Cut up margarine and place around on the top of all.

  7. Cover with a lid and cook slowly for about 30 minutes checking for doneness. Don’t stir too often or you will break up the potatoes as they get tender.
