Herbes de Luberon Rub

Ingredients

  • 1/2 cup dried basil
  • 2 Tbsp. dried marjoram
  • 1 1/2 Tbsp. dried lavender flowers
  • 1 1/2 Tbsp. coarsely ground fennel seeds
  • 2 tsp. kosher salt

Directions

  1. Combine all ingredients in a small bowl and mix well. Transfer to an airtight container and store in cool, dark pantry for up to 6 months.
  2. To use: Sprinkle generally on strong-flavored meats such as duck and goose; use a lighter touch on chicken or turkey. massage mixture over and under skin. Allow seasoned meat to sit for 30 minutes to 1 hour at room temperature or refrigerate for up to 8 hours before cooking.
  3. makes 3/4 cup

  4. Variation: Herbes de Luberon Rub for lamb, add I Tbsp. dried rosemay.
