Peanut Butter Pie

Ingredients

  • 1 baked pie shell
  • 3/4 cup confectioners' sugar
  • 1 cup peanut butter
  • 1 small box cook-and-serve vanilla pudding pie filling Plus ingredients listed on package (do not use instant)

Directions

  1. Heat oven to 350 degrees. Arrange pie shell in pie plate; set aside.
  2. In a small bowl, mix the confectioners’ sugar and peanut butter until crumbly. Sprinkle 3/4 of this mixture into your pie shell and set aside.
  3. Make the small box of vanilla pie filling according to package directions. Pour on top of the peanut butter mixture in the shell.
  4. Make a meringue for the top and sprinkle the rest of the peanut butter mixture on top of meringue and brown in oven for 15 minutes or until peaks start to turn brown.
  5. makes 1 pie

  6. For meringue: Carefully separate 3 egg whites. Beat whites with electric mixer until light and frothy. Add 1/2 cup sugar and 1/2 tsp. cream of tartar, and beat until stiff peaks are formed. Spread evenly over pie, being sure to seal edges, then form peaks with the back of the spatula.
