Carrot Salad with Ginger

Use as a dip for pita bread!

Ingredients

  • 1 pound carrots, peeled and cut into 2-inch lengths
  • 2 tbsp olive oil
  • 2 tsp white balsamic vinegar
  • 1 tsp honey
  • 1/4 tsp ground ginger

Directions

  1. Place carrots in a saucepan with enough water to cover.

  2. Bring to a boil and simmer for 20-25 minutes, until carrots are tender.

  3. Drain well and place carrots in a small mixing bowl; mash coarsely.

  4. Add remaining ingredients.
