Chicken and Parma ham skewers

Ingredients

  • 2 large skinless chicken breasts
  • 3 tbsp extra-virgin olive oil
  • juice of 1/2 lemon
  • 1 garlic clove, finely chopped
  • 8 fresh sage leaves, finely sliced
  • 3 slices Parma ham

Directions

  1. Cut each chicken breast into 9 pieces. In a shallow dish, mix the oil, lemon juice, garlic and sage leaves. Add the chicken, season, and toss to coat. Cover and leave to marinate in a cool place for at least 2 hours.

  2. Preheat the oven to 200˚C/fan 180˚C/gas 6. Cut each slice of ham into 6 strips. Wrap each piece of chicken with Parma ham and thread onto skewers – 3 pieces on each skewer, making 6 in total.

  3. Put a griddle pan over a high heat. When hot, add the skewers and cook for 1-2 minutes each side, to brown. Transfer to a baking sheet and finish in the hot oven for 7-8 minutes, or until just cooked through. Put 3 skewers onto each plate and served with seasonal vegetables.
