Sweet and sour coleslaw

Ingredients

  • 4 c thinly sliced/shredded white cabbage
  • 1 c thinly sliced/shredded red cabbage
  • 1 medium Vidalia sweet onion, thinly sliced
  • 1 c grated carrots
  • 1 Ttablespoon honey
  • 3 T apple cider vinegar
  • 3/4 t ground mustard
  • 1/2 t celery seeds
  • 1/2 t sea salt
  • 1/8 t ground pepper
  • 1/4 c extra-virgin olive oil
  • Toasted sunflower seeds

Directions

  1. In a medium bowl place the cabbages, onion and carrots and mix well.

  2. In a small bowl whisk together the honey, vinegar, mustard, celery seeds, sea salt and pepper.

  3. Pour the marinade/dressing over the veggies and toss well until everything is coated.
