Dutch Oven Yeast Rolls

Ingredients

  • 1 cup pineapple juice, warmed to 75-85 degrees.
  • 2 3/4 cups flour
  • 3 Tbsp. dry milk
  • 1/4 cup sugar
  • 1/4 tsp. salt
  • 1/4 cup melted butter
  • 1 Tbsp. dry yeast

Directions

  1. Mix dry ingredients.
  2. Add pineapple juice and melted butter slowly to dry ingredients.
  3. If camping or in a contest where there is not electricity, just mix by hand until the dough is smooth and pulls away from the side of the bowl. Cover with a cloth and let dough rise or 30 minutes. rolls off and then let rise until doubles in size.
  4. Punch down. Pinch rolls off and then let dough rise until doubled in size.
  5. Use a 12-inch cast iron skillet for a single recipe- 17 bricks on top, 8 bricks on bottom. Use a 14-inch Dutch oven for double recipe- 21 bricks on top, 11 bricks on bottom.
