Lemon-Mustard Viniagrette

Ingredients

  • 1 small shallot, minced
  • 1 Tbsp. white wine vinegar
  • 1 Tbsp. freshly squeezed lemon juice
  • 2 tsp. Dijon-style mustard
  • Salt
  • 3 to 4 Tbsp. extra-virgin olive oil
  • Ground black pepper

Directions

  1. In a small bowl, whisk together the shallot, vinegar, lemon juice and mustard.
  2. Season with salt and let stand for 20 minutes. Whisk in the oil. Season with black pepper. Adjust seasoning if desired. Use immediately.
  3. makes about 1/3 cup

  4. Note: To vary the flavor, try using different kinds of mustard.
