Toasted Pita & Bean Salad

Ingredients

  • 2 6 inch whole wheat pita breads
  • 2 cloves of garlic
  • 1/8 teaspoon salt
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons ground cumin
  • 3 tablespoons extra - virgin olive oil
  • 2 cups cooked, drained pinto beans
  • 1 cup sliced tomato
  • 1/2 cup diced cucumber
  • 1 cup sliced romaine lettuce
  • 1 cup crumbled feta
  • 3 tablespoons parsley
  • 3 tablespoons mint

Directions

  1. Preheat oven to 400 degrees.

  2. Spread pita pieces out on large baking sheet.

  3. Bake until crisp.

  4. Let cool.

  5. Mesh garlic and salt together to form a paste.

  6. Transfer to a bowl.

  7. Add lemon juice and cumin.

  8. Whisk together to blend.

  9. Add oil in slowly; whisking continuously.

  10. Place beans, tomatoes, and cucumbers in serving bowl.

  11. Add the toasted pita, lettuce, feta, parsley, mint to bowl.

  12. Pour dressing over top.

  13. Toss to mix.
