Creamy Cucumber Salad & Dressing

Ingredients

  • 1/2 pint whipping cream
  • 1 teaspoon salt
  • 3 tablespoons vinegar
  • 1/4 teaspoon ground pepper
  • 2 tablespoons sugar
  • 2-3 peeled sliced cucumbers
  • 1 small sweet onion sliced

Directions

  1. Mix cream, salt, vinegar, pepper and sugar together.

  2. Peel cucumbers, score outside of cucumber with the tines of a dinner fork…sort of makes stripes and looks really pretty when sliced. Also helps dressing “cling” to the cucumber. Slice cucumber to desired thickness.

  3. Slice some sweet onion, add to cucumbers.

  4. Pour dressing over cucumbers and onions.

  5. TIP: I put the cucumbers and onion in a “tupperware” type container and add the cream dressing. Put the lid on and shake well. I will shake periodically and shake again before serving.

  6. Chill a couple hours and serve.
