BBQ Grilled Chicken Kabobs

Ingredients

  • 1 lb. boneless skinless chicken breast
  • 6 cups of fresh vegetables (such as mushrooms, yellow squash, onion, cherry tomatoes, peppers)
  • 1 Tbsp. extra-virgin olive oil
  • 1 cup barbeque sauce

Directions

  1. Heat grill to medium heat. Thread chicken onto skewers alternately with vegetables, drizzle meat with olive oil. Grill 10 to 15 minutes, or until chicken is done; turning after 8 minutes and brushing with 1/2 cup barbeque sauce during the last 5 minutes. Garnish with fresh basil and serve with remaining barbeque sauce.
  2. Variation: grill salmon kabobs with cucumbers and cherry tomatoes.
