Lazy Beef Lasagne

By far, the easiest lasagne recipe I’ve ever tried.
Delicious and makes a big meal.
Can substitute chicken, seafood or vegetables for a variation on mince.

Cook time: 65 minutes
Serves 8 people

Ingredients

  • 400 gr can tomatoes
  • 2 cloves garlic, smashed
  • 420 gr can tomato soup
  • 2 T tomato paste
  • 1 t oregano, dried
  • 1 t basil, dried
  • 500 gr good quality beef mince
  • 100 gr dried lasagne pasta sheets
  • Sauce :
  • 3/4 C milk
  • 1 C grated cheese
  • 1 egg
  • 2 t cornflour

Directions

  1. Add first six ingredients to the beef mince and combine well.

  2. Spread 1/3 of meat mixture on base of large oblong baking dish.

  3. Cover with layer of lasagne pasta sheets.

  4. Repeat layers, using remaining mixture, ending with pasta.

  5. Cover with foil, bake at 170oC for 45 minutes.

  6. Remove from oven and top with ‘sauce’ mixture.

  7. Sauce: mix milk, egg, cheese and cornflour.

  8. Pour over cooked meat/pasta dish and bake, uncovered, for further 10 minutes.

  9. Remove from oven and stand 10 minutes before serving.
