Easy Butter Chicken

Quick to make, and with a delicious flavour
Can be made more healthy by substituting lite cream, evaporated milk or plain yoghurt for the cream – it may then need to be thickened with a little cornflour at the end if a thicker sauce is required

Cook time: 30 minutes

Ingredients

  • 1 kg skinless, boneless chicken, cubed
  • 25 gr margarine or butter
  • 2 cloves garlic, smashed
  • 2 t root ginger, freshly grated (or in jar)
  • 3 t garam masala
  • 2 t ground cumin
  • 2 t brown sugar
  • 2 t lemon juice
  • 2 t minced chilli (use less if preferred)
  • 100 gr tomato paste
  • 1/2 t salt
  • 500 ml cream

Directions

  1. Lightly brown chicken in margarine, set aside.

  2. Add garlic, ginger, spices, sugar and lemon juice to pan, cook gently over low heat, stirring, for one minute.

  3. Add remaining ingredients, except chicken, and simmer for 5 minutes.

  4. Add chicken, simmer for further 15 minutes, until chicken is cooked. Season to taste.

  5. Serve with cooked basmati rice, roti or naan bread.
