Plum Chutney

Ingredients

  • 1 lb. red or yellow plums, seeded and chopped (2 1/2 cups)
  • 1/4 cup sugar
  • 1/4 cup chopped onion
  • 3 Tbsp. orange juice or water
  • 2 Tbsp. golden raisins
  • 2 Tbsp. vinegar
  • 2 cloves garlic, minced
  • 1/2 tsp. ground allspice
  • 1/4 tsp. salt

Directions

  1. In a large saucepan combine chopped plums, sugar, onion, orange juice or water, raisins, vinegar, garlic, allspice and salt. Bring to boiling; reduce heat. Cover and simmer for 30 minutes, stirring mixture occasionally. Uncover and cook about 10 minutes more or till chutney has desired consistency (slightly thinner than preserves, thicker than a sauce). Cool chutney to room temperature. Cover; chill in the refrigerator for up to 1 week before serving.
