Mustard Relish Molds

Serves 6 people

Ingredients

  • 1 envelope unflavored gelatin
  • 1/4 cup cold water
  • 2 1/4 tsp. dry mustard
  • 3/4 tsp. salt
  • 1 tsp. MSG
  • 1 cup cider vinegar
  • 3 eggs, slightly beaten
  • 3/8 tsp. Sweeta (liquid sweetener)
  • 1/2 cup finely diced celery
  • 1/2 cup grated raw carrot
  • 1/2 cup finely diced green pepper

Directions

  1. Sprinkle gelatin on cold water. Combine mustard, salt,, MSG, vinegar and eggs in saucepan. Stir over low heat until thickened (do not boil). Add gelatin; stir until dissolved. Stir in Sweeta. Chill until syrupy. Fold in celery, carrot and green pepper. Spoon into 6 small individual molds. Chill until set. Unmold. Serve with cold meats as a relish.
