quick Banana Corn Cakes Recipe

Ingredients

  • 3/4 cup all-purpose flour
  • 1/2 cup cornmeal (fine)
  • 1 Tbsp. granulated sugar
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 cup milk
  • 2 eggs
  • 1 Chiquita® banana, chopped
  • 3/4 cup thawed corn kernels
  • Oil, for frying
  • Barbecue sauce, for dipping

Directions

  1. Stir together flour, cornmeal, sugar, baking powder and salt. In separate bowl, whisk milk with eggs; whisk in flour mixture until well combined and smooth. Stir in banana and corn.

  2. Heat enough oil to come ½ inch up side in 12-inch skillet over medium heat; drop scant tablespoonfuls of batter into oil. Cook, in batches, for 2 to 3 minutes per side or until golden; drain on paper towel. Serve with barbecue sauce
