Mango- Apricot Chutney

Ingredients

  • 1/2 cup chopped mango
  • 1 cup diced Golden Delicious apple
  • 1 cup diced onion
  • 1 cup diced wine vinegar
  • 1/2 cup brown sugar
  • 1/4 cup chicken stock
  • 1 Tbsp. minced ginger
  • 3 cloves garlic, minced
  • 1/2 tsp. salt
  • 1/4 tsp. cinnamon

Directions

  1. Combine all ingredients in heavy saucepan and bring to boil. Reduce heat and simmer, uncovered, 1 hour, stirring frequently.
  2. Reduce heat and simmer, uncovered, 1 hour, stirring frequently. Remove from heat. Let cool. Refrigerate in airtight container.
  3. Serve at room temperature, with pork tenderloin, poultry or ham.
  4. makes about 4 1/2 cups
