Lime Edamame Dip

Ingredients

  • 12 oz. cooked Edamame
  • 1/2 an Avocado
  • 1 big clove of Garlic
  • 1 Shallot
  • 3 Tbsp Olive Oil
  • Juice of 1 Lime
  • 1/4 cup mix of Parsley and Cilantro
  • Salt to taste

Directions

  1. Bring all ingredients together and pulse for 2-3 minutes until smooth, and parsley is evenly mixed in. Blend longer and add drops of water if necessary to achieve desired consistency. Serve with endives or crackers. Enjoy!
