Mexican Street Corn Popcorn

Ingredients

  • 2 Tbsp. melted butter
  • 2 Tbsp. mayonnaise
  • 1 tsp. lime juice
  • 8 cups popped popcorn
  • 1 tsp. salt
  • 1 1/2 tsp. paprika
  • 1/4 tsp. sugar
  • 1/4 tsp. cayenne

Directions

  1. Whisk together melted butter, mayonnaise and lime juice in a small bowl. Pour over popped popcorn, gently toss to coat. Then combine salt, paprika, sugar and cayenne.

  2. To pop corn, use 1/2 cup kernels to make about 8 cups popcorn. Preferably air pop corn because it is unflavored and lighter. If using microwave corn, use 2 packets of unflavored kernels.
