Chicken Lo-Mein

Ingredients

  • 1-1/2 lbs breast of chicken cut in 1" pieces
  • 1/2 tsp minced garlic
  • 1 red pepper cut in thin strips
  • 5 medium mushrooms cut into quarters
  • 2 c fresh bean sprouts
  • 6 ozs fresh peapods
  • 3 green onions cut in 2" lengths
  • 1/4 c soy sauce mixed with 1 tsp sugar, divided
  • 2 tbsp sherry or water
  • 1/2 c veg oil
  • Pepper
  • 8 oz linguine, cooked

Directions

  1. In a bowl mix chicken, garlic and 1 tbsp soy sauce mixture

  2. Stir fry chicken in 3 tbs oil for 3-5 minutes

  3. Remove to large bowl.

  4. Add more oil and stir fry bean sprouts, red pepper, pea pods, mushrooms and scallions. Stir fry one minute.

  5. Add sherry, cover, cook one minute

  6. Remove veggies and add to chicken in bowl

  7. Discard liquid in pan

  8. Add oil and stir fry linguine until hot

  9. Add remaining soy sauce

  10. Add veggies, chicken and toss until hot
