Pepper Relish

Ingredients

  • 12 red peppers
  • 12 green peppers
  • 12 onions, peeled
  • 2 cups vinegar
  • 1 1/2 cups sugar
  • 2 Tbsp. salt

Directions

  1. Split pepper and remove the seeds. Chop peppers and onions coarsely, cover them with boiling water and let stand 5 minutes. Drain. Cover again with boiling water and let stand 10 minutes. Drain.
  2. Combine remaining ingredients and boil for 5 minutes, add vegetables and boil together 10 minutes. Pack into hot sterilized jars and seal.
  3. makes 2 pints
