Stuffed Tomaotes

Ingredients

  • 1 medium onion, finely chopped
  • 1 lb. lean ground beef
  • 4 very large ripe tomatoes
  • 1 cup loosely packed fresh mint
  • 1 tsp. coarse salt
  • 1/4 tsp. pepper
  • 3/4 cup cooked rice

Directions

  1. In a large skillet, cook the onion and ground beef on medium-high for 7 minutes or until meat is no longer pink; drain.
  2. Meanwhile, cut thin slices from each stem- end of the tomatoes; remove and discard stems, ; cover and microwave on high for 2 minutes; reserve slices. With a spoon, scoop out seeds and pulp from each tomato; reserve. Place tomatoes in a baking dish, cut side down; cover and microwave on high for 2 minutes or until heated; drain.
  3. Chop the mint, the reserved tomato slices and reserved pulp; set mint aside. In a large microwave-safe dish, the chopped tomatoes and pulp mixture, cooked rice, salt and pepper and drained meat. Cover and microwave 8 to 10 minutes on high. Stir mint into mixture. Fill tomato shells with meat mixture and serve.
