Southern Spicy BBQ SAuce

for use on ribs, beef, pork or BBQ chicken

Ingredients

  • 1/2 cup chopped sweet onion
  • 2 garlic cloves, minced
  • 1 jalapeno pepper, seeded and minced
  • 1 Tbsp. olive oil
  • 1 32-oz. bottle of ketchup
  • 1 cup brown sugar, firmly packed
  • 1 cup apple cider vinegar
  • 1/2 cup apple juice
  • 1/2 cup honey
  • 1 Tbsp. Worcestershire sauce
  • 1 tsp. kosher salt
  • 1 tsp. ground pepper
  • 1 tsp. celery seeds
  • 1/2 tsp. dried crushed red pepper

Directions

  1. In a large saucepan, sauté onion, minced garlic and jalapeno pepper in 1 Tbsp. olive oil over medium-high heat 4 to 5 minutes or until done. Stir in bottle of ketchup, brown sugar, apple cider vinegar, apple juice, honey and Worcestershire. Add all spices. Bring to a boil, stirring occasionally. Use immediately, or refrigerate in airtight container up to 1 month.

  3. tips: Whole pork shoulders, chicken halves, and ribs sizzle on the grates and are best slow cooked and smoked.

  4. Last 5 minutes of cooking, spray meat with apple juice and braise with sauce.

  5. No smoker? Use an ordinary grill and a bag of soaked wood chips.
