Picante Pepper Relish

Ingredients

  • 1 can (11 1/2 oz.) picante V-8 juice
  • 1 medium onion, chopped
  • 1 medium tomato, seeded and chopped
  • 1 cup minced fresh cilantro or parsley
  • 4 to 5 Serrano peppers, seeded and minced
  • 3 Tbsp. lemon juice
  • 1 tsp. salt

Directions

  1. In a bowl, combine all ingredients; mix well. Cover and refrigerate. Serve as an accompaniment to meat or fajitas.
  2. makes 3 cups
