Ingredients

  • 2 to 3 sweet green peppers
  • 12 lb. green tomatoes
  • 4 onions
  • 1 cup salt
  • 3 quarts vinegar
  • 4 cups sugar
  • 1 tsp. ground ginger
  • 1 tsp. cinnamon
  • 2 Tbsp. mustard seed
  • 1 cup grated horseradish
  • OR as an alternative:
  • 2 sweet red and green peppers
  • 4 cups chopped green tomatoes
  • 1 cup chopped celery
  • 2 large onions
  • 1 small head cabbage
  • 1/2 cup salt
  • 3 cups vinegar
  • 1 lb. brown sugar
  • 1 tsp. dry mustard
  • 1 tsp. turmeric

Directions

  1. Remove seeds from peppers. Chop vegetables very fine. Arrange vegetables in layers sprinkling each layer with salt and let stand overnight. Drain and add remaining ingredients. Cook until tender, stirring occasionally. Pour into hot sterilized jars and seal.
  2. makes 12 pints

  3. Prepare alternative ingredients in the same way.
