Roasted Pork Tenderloin Cinnamon- Apples and Onions

Ingredients

  • 2 lb. pork tenderloin, trimmed
  • 2 medium tart apples, peeled and sliced in 1/2-inch wedges
  • 2 medium shallots, thinly sliced
  • 3 garlic cloves, smashed
  • 2-3 Tbsp. olive oil
  • 1/2 cup apple cider
  • 3 Tbsp. butter
  • Salt and coarse pepper to taste
  • 1/4 tsp. ground cinnamon
  • 3 Tbsp. brown sugar
  • 2 Tbsp. chopped pecans

Directions

  1. Preheat oven to 350 degrees. Season pork with salt and pepper and drizzle with olive oil. heat a large cast-iron skillet over medium- high heat and sear aside. Toss apples, shallots, garlic and thyme together in a bowl; drizzle with olive oil and season with salt. Cook in same skillet, stirring occasionally until apples and onion are lightly brown yet firm, about 5 minutes. lay tenderloin over the apple mixture and pour in the cider. Roast in oven until thermometer inserted into the thickest part of the tenderloin reaches150 degrees.
