Applen Salsa Frittata

Ingredients

  • 4 1/2 cups (1 lb. 2 oz.) Granny Smith apples, cored, peeled, diced
  • 3 cups seedless cucumber, diced
  • 2 cups red onions, diced
  • 2/3 cup jalapeno peppers, seeded and minced
  • 1/4 cup Italian cilantro, chopped
  • 10 large eggs, beaten
  • 5 cups shredded cheddar cheese
  • 2/3 cup fresh lime juice
  • 1/2 cup olive oil
  • 2 cups thick and chunky salsa, (strain liquid)
  • 1 tsp. salt
  • 1/2 tsp. pepper

Directions

  1. Preheat oven to 350 degrees. using olive oil, prepare a large cast-iron skillet or baking pan.
  2. In a bowl, combine apples, cucumbers, red onions, peppers and parsley. In a separate bowl, blend eggs, 2 cups of the cheddar cheese, and lime juice with remaining ingredients. Stir egg mixture into apple mixture.
  3. Pour into prepared skillet and top with remaining 3 cups cheese. Bake 30-35 minutes until frittata is set and cheese is golden brown. Cool 5 minutes, cut into servings.
  4. You can easily change ingredients to vary this recipe.
