Greek Turkey Burgers with Tzarziki

Ingredients

  • 1 lb. ground turkey (93 % lean)
  • 1/2 cup crumbled feta cheese
  • 2 garlic cloves, minced
  • 1 cup frozen chopped spinach, thawed and squeezed dry
  • 1 tsp. dried oregano
  • 1/2 red onion, finely chopped
  • 1/2 tsp. salt
  • 1/2 tsp black pepper
  • 2 Tbsp. olive oil
  • 4 pita breads or whole- grain buns
  • for Tzatziki sauce:
  • 1/4 cup grated cucumber
  • 1 cup plain Greek yogurt
  • 1/2 Tbsp. chopped fresh dill
  • 1/2 tsp. salt
  • 1 minced garlic clove
  • juice of 1/1 lemon

Directions

  1. In a medium bowl, combine turkey, feta, garlic, spinach, oregano, red onion, salt and pepper and mix well. Shape mixture into 4 patties.
  2. Heat oil in a large skillet over medium- high heat. Add burgers and cook 5 to 6 minutes per side. Remove from heat and serve on pita bread or buns.
  3. To make Tzatziki:

  4. Combine cucumber with yogurt in a small bowl. Add dill, salt garlic clove and lemon juice. Chill at least 30 minutes or until ready to serve.
  5. Can substitute an equal amount of shredded sharp white cheddar for feta, and top burgers with a small spoonful of hot pepper relish instead of the Tzatziki if you prefer.
