Fig Preserve Cake

Ingredients

  • 2 cups flour
  • 1 tsp. salt
  • 1 tsp. soda
  • 2 Tbsp. cornstarch
  • 1 1/2 cups sugar
  • 1 tsp. nutmeg
  • 1/2 tsp. cloves
  • 1 tsp. cinnamon
  • 1 cup cooking oil
  • 3 eggs
  • 1 cup buttermilk
  • 1 cup chopped fig preserves, (drain syrup from preserves before cutting up)
  • 1 Tbsp. vanilla
  • 1/2 cup nuts (optional)

Directions

  1. Stir first 8 dry ingredients together, add oil, eggs, buttermilk, preserves, vanilla and nuts. Bake in greased and floured 9 × 13 pan for 45 minutes at 325 degrees or a tube pan at 350 degrees until done.
  2. Cake is good as is or you can make a sauce for it by mixing 1 cup sugar, 1/2 cup buttermilk, 1 Tbsp. butter, 1 Tbsp. corn syrup and 1/2 Tbsp. soda. Bring to a boil and cook 3 to 5 minutes. Pour on warm cake.
