Rum Pudding

Ingredients

  • 6 egg yolk, beaten
  • 1 cup sugar
  • 1/4 cup cornstarch
  • 1/4 cup cold milk
  • 24 macaroons, cut into small pieces
  • 6 egg whites, stiffly beaten
  • 1/4 cup rum

Directions

  1. Combine egg yolks, sugar, cornstarch and cold milk in top part of a double boiler. Mix until well blended and smooth. Add scalded milk; mix well. Cook over boiling water, stirring constantly, until thickened. Cover. Continue cooking over hot, not boiling, water for 20 minutes longer.
  2. Place macaroons in bottom of a large serving bowl. Cover with egg whites. Pour hot custard over all. Let stand until cool. Sprinkle with rum. Chill for 3 hours or until set.
