White bean crostini

Ingredients

  • 12 thin rounds cut from a baguette
  • 4 tbsp olive oil
  • 410g cannellini beans, drained and rinsed
  • 1 tbsp balsamic vinegar
  • pinch of sugar
  • 1 garlic clove, finely sliced
  • 1/2 tsp dried chilli flakes
  • fresh basil leaves, to serve

Directions

  1. Preheat the grill to high. Brush the bread slices on both sides with half the oil. Place on a large baking sheet and pop under the grill for 3-4 minutes, turning, until golden.

  2. Meanwhile, place the remaining ingredients , except the basil, in a pan over a medium-low heat. Cook gently for 5 minutes, then season. Tip into a bowl and set aside to cool.

  3. Top the bread with a basil leaf and the bean mix, or serve separately and build at the table.
