Banana- Peach Jam

Ingredients

  • 7 medium peaches, peeled and pitted
  • 1 medium slightly green banana
  • 3 Tbsp. lemon juice
  • 1 1 3/4 oz. pkg. powdered fruit pectin
  • 5 1/2 cups sugar

Directions

  1. Finely chop the peaches and measure 3 cups. Slice the banana and sprinkle with lemon juice, in 6 to 8 quart Dutch oven combine fruit with the pectin. Bring to full rolling boil; stir constantly. Stir in the sugar. Bring again to full rolling boil; boil hard, uncovered, 1 minute, stirring constantly. Remove from heat. Skim off foam with metal spoon. Pour into hot, sterilized half-pint jars or glasses; seal.
