Beet- Raspberry Jelly

Ingredients

  • 3 cups beet liquid (see note)
  • 2 envelopes ((0.15 oz. each) unsweetened raspberry soft-drink mix (4 tsp.)
  • 4 tsp. lemon juice
  • 1 pkg. (1 3/4 oz.) powdered pectin
  • 4 cups sugar

Directions

  1. Combine first 3 ingredients in heavy kettle. Stir in pectin. Turn heat on high and quickly bring to hard boil, all at once, bring to full rolling boil and boil hard, stirring occasionally. Add sugar all at once., bring to a full rolling boil and boil hard, stirring, 1 minute. Remove from heat and skim off foam, using a metal spoon.
  2. Pour at once into hot sterilized jars to within 1/2 inch from top. Seal.
  3. makes about 5 half-pints

  4. Note: To obtain beet liquid, wash, scrub, slice and quarter fresh beets. Cover with water and cook until tender. Drain off liquid. Remove skins and use beets as desired. Or use liquid drained from unseasoned canned beets.
